Hurricane Harvey

Hi friends! I just wanted to give everyone an update of hurricane Harvey. We are now 5 days in and the majority of Houston is completely under water. Being from Corpus Christi and now living in Houston, this storm has definitely hit home. We have been in Dallas since Friday, and I am SO thankful we got out while we could. Pretty much every neighborhood around ours is under a mandatory evacuation. It breaks my heart to see the pictures and to think about the people who have lost everything. We have many friends in Houston whose homes have flooded, have had to evacuate with nothing, or have been stuck inside their homes for days praying that the water doesn’t start to come in. So many roads are closed and so many people have lost their homes and everything they had. It is so heart breaking to see the news and the many pictures on social media that have been shared.

Thank you to everyone that has reached out to me to check on Patrick and I and my parents. Patrick and I got out on Friday, thankfully, and came to stay with Patrick’s parents in Dallas. As far as we know our house has not flooded. We have been extremely lucky thus far. Our plan is to go back as soon as we are able to to get back safely. My parents left Corpus Christi on Friday and were able to get back home on Saturday. Their home was not damaged and they only had a few tree limbs down.

I have had a few people reach out to me asking how you can help so I wanted to share a few different organization I have found where you can donate and a few different places where you can take food and clothing donations.

The greater metropolitan area is circled by the Grand Parkway – which is 170 miles long. That makes the area of the circle inside the Grand Parkway over 2200 sq. miles.

2200 square miles of densely habited, urban and suburban, areas is flooded.

Imagine if the entire state of Delaware, with twice the population of Manhattan, was under water.

That’s Houston.
It’s still raining.

Black Ruffle Top and Gluten Free Shampoo and Conditioner

Happy Monday! My fiancé and I are currently in Dallas because of Hurricane Harvey in Houston! The weather there is INSANE! Prayers to everyone impacted by the horrible conditions!

I wanted to share my favorite GF hair products right now with you all today! Lately I have been switching between two shampoos and conditioners because I love them both! The first one is this shampoo and this conditioner. They smell amazing and make your hair so soft. I also swear by this spray. It is a leave-in-conditioner and my hair feels so dry without it! The other shampoo that I love is this shampoo. I have no volume in my hair and it just sticks to my head but this shampoo actually lifts it and gives it volume! The only thing I don’t like about this shampoo is that it does leave your hair a little dry. That is why I have been switching back and forth! Along with the shampoo I use this conditioner and this volume mousse. I have blonde baby lights in my hair and to keep them from becoming brassy I use this shampoo. BEST STUFF EVER!!

Now about this amazing black top! Talk about the PERFECT date night top! The fit is so amazing, and it comes in three different colors! The ruffles and open shoulder make me so happy! When I saw it, I knew it was a keeper! These jeans are American Eagle! Their jeans always fit me SO well! I have such a hard time finding jeans that fit my waist and legs but American Eagle jeans always fit great. My shoes are Steve Madden and although they aren’t the most comfortable shoes, they are so pretty! Beauty is pain right?! Definitely one of my favorite pairs of shoes! My clutch is the perfect size and literally matches almost everything! I’m obsessed!

Italian Stuffed Zucchini Boats – My FAVE!

Happy Tuesday y’all! I hope you all are having a great week so far! Today I wanted to share this adorable outfit with you all as well as one of my FAVE recipes I have found! So since going gluten free, I have been a Pinterest fanatic! Finding new recipes that I love is so great for me because I am such picky eater! When I found these zucchini boats, I was so excited! They are one of my favorite things to make. So easy and SO SO yummy!!

Ingredients:

3 medium sized zucchini

1 (24 t0 26 ounce) jar tomato basil marinara, divided (So I am really picky and love this Ragu sauce flavored with meat so this is what I used)

1 tablespoon olive oil

1 pound ground turkey or beef

1/3 cup chopped onion (I don’t like onions so I just used minced onion and didn’t put as much)

1/3 cup chopped red bell pepper (I also don’t like bell pepper, so I just opted to leave them out! I know, SO picky)

1/2 cup chopped brown button mushrooms (Again, I don’t like mushrooms so I just left them out 😉 )

1/4 cup chopped fresh Italian parsley

1 teaspoon Italian seasoning

1/2 teaspoon salt

Fresh ground black pepper, to taste

1/4 teaspoon crushed red pepper, or to taste

1-1/2 cups shredded mozzarella cheese

1/4 cup shaved or shredded parmesan

2 tablespoons Italian style panko break crumbs (gluten free bread crumbs if you’re gluten free!)

Instructions: 

Preheat the oven to 375 degrees F.

Measure out 1 cup of the marinara sauce and set it aside.

Trim ends of zucchini and live in half, lengthwise. Use the tip of a spoon to scrape out the zucchini flesh, chop it and set aside.

Place the scooped out zucchini boats into a 13″X9″ baking dish and add about 1″ of water to the bottom of the pan. Cover the pan with foil and bake in oven for 20 minutes or until zucchini boats are slightly fork-tender. Remove from oven, and set aside to cool slightly.

Add olive oil to a 12″ skillet and place over medium heat. Add turkey or beef, onion, bell pepper, and garlic to the skillet. Cook, stirring to break up the ground meat as it cooks. Continue to cook and stir until meat is thoroughly cooked and veggies have softened. Drain off as much grease as possible and return the skillet to the heat.

Add the chopped zucchini flesh, mushrooms, remaining marinara from jar (reserve 1 cup for later) parsley, Italian seasoning, salt, ground pepper and crushed red pepper. Stir well to combine. Bring to a simmer then reduce heat and allow to simmer over low heat for about 15 minutes.

Divide the filling between the zucchini boats. If you have extra filling, spoon it into the dish around the zucchini boats. Cover the dish with foil, and bake for 20 minutes, or until zucchini is for tender. Remove dish from oven.

Set oven to BROIL.

Remove foil and sprinkle zucchini boats with mozzarella, parmesan and the panko bread crumbs. Place dish in oven, watching closely, and cook for a couple of minuted until cheese has melted and bread crumbs are golden brown.

Outfit details

Now on to this outfit! I found this top last week at Nordstrom and was obsessed! It’s light enough to wear in this unbearable Houston heat, but perfect for the upcoming fall months as well! I have always loved this mustard yellow color! It’s perfect for summer and fall. These shorts are my favorite jean shorts I have found so far. I have a really hard time finding jean shorts that I like because they are always too short or too big in my waist! I like these because they are longer in that back so your booty doesn’t show! They are also higher waisted so you don’t have to worry about them being too low! My shoes are so comfortable and have definitely been on repeat lately! Sorry not sorry 😉

6 Favorite Gluten Free Snacks I Always Buy While Grocery Shopping

Happy hump day friends! While grocery shopping today I realized one of the most frequently asked question I get from people when I tell them I’m gluten free is, “So what do you eat?” So I decided to round up my 6 favorite gluten free snacks that you can buy at the grocery store that I always have in my pantry! I will link each one below where you can shop!

  1. Skinnypop Popcorn is one of my favorite snacks! It’s gluten free and only has 150 calories per serving! There are many different flavors but my favorite is the original. Seriously SO good! 
  2. KIND bars are another go-to snack for me! I am one of those people who has to eat pretty much every hour because I am ALWAYS hungry! These are a great snack that fills you up! 
  3. Chex cereal is hands down my favorite cereal. I love the cinnamon and the honey nut flavors! 
  4. These pretzels are so good and have the best flavor! I actually prefer gluten free pretzels over regular pretzels! They are way more crunchy!
  5. I am actually obsessed with these cheese crackers! They don’t taste gluten free at all! My fiancé, Patrick, even loves them and that’s saying A LOT! 😉 
  6. I am a huge fan of yogurt and granola and this is the best gluten free one I have found! 

Besides these few of my favorite snacks, I always have fruit and vegetables in my fridge to snack on!

Now on to something completely off topic..The outfit I wore today while running errands! This tank is another staple that I have in my closet that literally goes with anything! I have a feeling you’ll be seeing this one a lot! The shorts I have on are from my favorite boutique ever, Sabi Boutique! They are so flowy and comfortable and I love the color! My shoes are such a great transition shoe from summer into fall. My handbag is Barrington and I am obsessed with these bags. They are such a great price point for such a great quality bag and completely customizable!

Gluten Free & Vegan Banana Bread

Hi friends! I’m so very excited to share with you my first recipe, banana bread!!

So I feel like I should just go ahead and tell you all now, I LOVE sweets. Especially Banana Bread. When I found this recipe I was so excited because it was so easy and SO good! It is perfect for breakfast or just for a snack. It only takes about 5-10 minutes to prepare and 45 minutes to cook!

Ingredients:

1 3/4 cups gluten free flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup sugar

1/2 cup brown sugar

1/3 cup coconut oil

2 very ripe bananas (seriously the more ripe they are, the better the bread!)

1 teaspoon vanilla extract

1 teaspoon white vinegar

3/8 cup water

Instructions: 

Preheat the oven to 350 degrees. Grease a loaf pan with a little coconut oil (or if you’re lazy like me, ‘Pam’ works just as well!)

In a large mixing bowl, place the bananas and the solid coconut oil. Microwave for 30-40 seconds until the coconut oil is melted. Mash the bananas with a potato masher or fork. (I didn’t have to mash the bananas because of how soft they already were. My coconut oil was also room temp so when I mixed it, it melted!)

Add the sugar, brown sugar, vanilla, water and vinegar and mix until combined.

Add the gluten free flour, baking soda, baking powder, and salt and mix together.

Spoon the dough into the loaf pan and bake at 350 degrees for 40-45 minutes (mine actually took 50 minutes to cook). Test it by putting a toothpick in the middle of the bread and seeing if it comes out clean!

Cool the bread for 30 minutes on a cooling rack.

My name is Rachel Kaplan and I am the founder and author behind Little Bit of Living! Throughout college I followed many fashion bloggers and have always enjoyed reading blogs. I have always gone back and forth on starting one, but never really knew where to begin. After months of thinking in my head, I have decided to just go for it!

My freshman year of college I was diagnosed with celiac disease. I have linked a article on exactly what celiac is here but basically that means I have to eat gluten free. Now before I was diagnosed, I was queen of eating out and eating everything not gluten free. I seriously had no idea what gluten even was! After struggling to figure out the life of being gluten free, I decided that I wanted to be able to help out other people who are going through the same thing! I am so excited to share gluten free recipes, gluten free beauty, and other gluten free finds that I discover with you all!

Lastly, I am obsessed with my dogs. To be quite honest, obsessed might not even explain how much I love them. I am always looking for new and exciting things for them and can’t wait to share them with you all.
