Gluten Free & Vegan Banana Bread

Hi friends! I’m so very excited to share with you my first recipe, banana bread!!

So I feel like I should just go ahead and tell you all now, I LOVE sweets. Especially Banana Bread. When I found this recipe I was so excited because it was so easy and SO good! It is perfect for breakfast or just for a snack. It only takes about 5-10 minutes to prepare and 45 minutes to cook!

Ingredients:

1 3/4 cups gluten free flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup sugar

1/2 cup brown sugar

1/3 cup coconut oil

2 very ripe bananas (seriously the more ripe they are, the better the bread!)

1 teaspoon vanilla extract

1 teaspoon white vinegar

3/8 cup water

Instructions: 

Preheat the oven to 350 degrees. Grease a loaf pan with a little coconut oil (or if you’re lazy like me, ‘Pam’ works just as well!)

In a large mixing bowl, place the bananas and the solid coconut oil. Microwave for 30-40 seconds until the coconut oil is melted. Mash the bananas with a potato masher or fork. (I didn’t have to mash the bananas because of how soft they already were. My coconut oil was also room temp so when I mixed it, it melted!)

Add the sugar, brown sugar, vanilla, water and vinegar and mix until combined.

Add the gluten free flour, baking soda, baking powder, and salt and mix together.

Spoon the dough into the loaf pan and bake at 350 degrees for 40-45 minutes (mine actually took 50 minutes to cook). Test it by putting a toothpick in the middle of the bread and seeing if it comes out clean!

Cool the bread for 30 minutes on a cooling rack.
