HI! I hope everyone has had a great Thursday! Be happy because tomorrow is FRIDAY! I don’t know if it’s just me, but this week feels like it is never going to end! On the bright side, Patrick and I are going to Dallas this weekend for cake testing, and I’m so excited! Getting to try all different flavors of cake sounds like a dream to me!!
Super excited to share this sweet potato recipe with you all today! I am a huge fan of sweet potatoes in general but these literally taste like heaven and aren’t bad for you! Let’s be honest, I normally would load my sweet potato with butter, brown sugar and marshmallows but I now prefer these! They’re also super easy to make so it’s a win-win!
Ingredients:
2 sweet potatoes (peeled and cubed into 1 inch cubes)
2TB butter (melted)
Directions:
Preheat oven to 400 degrees
Peel and cube sweet potatoes into 1 inch cubes
Place garlic, oil, butter, salt, parmesan cheese and Italian seasoning in a large ziplock bag and mix well
Throw in sweet potatoes and shake until well coated
Place aluminum foil on cookie sheet and lightly spread out evenly
Bake for 18-22 minutes
Serve warm and sprinkle with dried parsley if desired

Seriously, everyone needs to try these! They are the best. I make these almost every time we have friends over for dinner and everyone so far has loved them!
