Hello friends! Happy Thursday! Today is my 23rd birthday so I decided to do a fun post and share 23 different things about myself that you all might not already know! Also, stay tuned for a fun birthday giveaway I am doing starting next Tuesday, February 13th! I totally planned on starting it today but wedding stuff got crazy and I am not done putting it all together! It will involve all of my favorite things and I am so excited about it! I am obsessed with sweet tea! I have tried to switch to unsweet tea multiple times but have never succeeded!
Mexican food is my all time favorite food. I would eat it every meal if it was acceptable!
One of my favorite snacks is kettle corn popcorn mixed with nacho cheese Dorito’s. Yes I know, it sounds so weird but I promise it is SOOOOO good!
I am a shoe fanatic and have been since I was little. My mom says I used to ask her to take me shoe shopping every time I had money to spend!
I have three dogs that are my children. Sadie is a lab mix, Remi is a yellow Lab and Molly is a miniature dachshund .
I have a serious issue with other people’s feet and freak out if someone puts their feet on me.
I started showing sheep and goats when I was 8 years old and showed all through school until I was 18. I was heavily involved in 4H but was the farthest thing from “cowgirl” you have ever seen! I actually never even showed in boots, HA! I always showed in Sperries.
I have never lived out of Texas. Patrick is trying to take me somewhere new!

I LOVE graphic design and actually wanted to do that when I graduated college but decided that I hated the marketing side of things. Instead I have decided to teach and do graphics on the side.
I only have one sister, Hannah, and she is 26. My poor dad!
I am addicted to the Investigation Discovery Channel. Besides Grey’s Anatomy, it’s the only channel I watch on TV.
My all time favorite show is Grey’s Anatomy. I’m not kidding when I say I have watched every episode of all 14 seasons like seven times.
I’m a total girly girl but LOVE fishing and hunting!

I have absolutely no rhythm but love to dance.
I’m certified to scuba dive and it is one of my favorite things to do.
I dated a guy all through high school and throughout my first year of college and was treated very poorly. When I finally broke up with him I told myself I was going to take at least a year to myself before getting into another relationship. I met Patrick days after that year had passed. God’s timing is always perfect!
My dream is to open up a dog adoption center! I would absolutely LOVE to be able to take in dogs that don’t have homes and find their forever homes!
Happy Wednesday you guys! I hope everyone had a great Christmas! Patrick and I spent the weekend at my parents in Corpus Christi. It was such a nice weekend to spend with family! Now time to get back to reality and back on a life schedule and blogging schedule! Not gonna lie, I’ve been slacking lately!
This sweater gives me major heart eyes! Who doesn’t love a good red sweater? It’s extremely soft and cozy. I will definitely be taking this babe with us to Canada on our honeymoon at the end of January! Speaking of wedding, we are officially a MONTH away from our wedding day! I seriously can’t believe how fast our engagement has gone by. When we got engaged last January, I felt like we had so much time! I am counting down the days and we are both so excited.
I paired this sweater with these cheetah booties and I can’t recommend these to y’all enough. They are super comfortable and match with so much. They are also on sale so it’s the perfect time to grab them before they’re gone.

Hello friends! Happy Friday! Y’all, I have been SO busy lately! Definitely a good kind of busy but I feel like I haven’t stopped. Wedding craziness has officially started along with the hustle and bustle around the holidays! With Christmas, New Years and our wedding coming up I have definitely started prepping with hair masks, face masks and teeth whitening! So many pictures are in my near future and I want to make sure I look my absolute best. I mean, who wants to look back on your wedding pictures and not like the way you look?! I was super excited to start using the Smile Brilliant teeth whitening kit. I have already noticed such a huge difference in the color of my teeth and it’s only been a few weeks!
When you order the kit, the company sends you a box with the molding and the trays to make your molds in. There are step by step instructions inside which makes it super easy! After you make your impressions, you just put them back in the mailer they include in the box and ship them back to Smile Brilliant! They then make your custom fitted whitening trays and ship them right back to you! They have a super quick turnaround so you can get to whitening! The teeth whitening gel comes in tubes that you line your tray with. It’s not messy and they actually stay on your teeth unlike the other whitening products that I have tried! I usually wear mine while I’m getting ready and I literally forget I have them in! It is so nice to have something comfortable and that stays in and does the job. The best part about them is it doesn’t make my teeth sensitive. I have seriously tried every whitener in the books but they all make my teeth so sore! Smile brilliant is great because it comes with desensitizing gel as well to use after whitening to prevent soreness.
Hello friends! 13 days until Christmas! Can you believe it?! I swear just yesterday it was January. It amazes me how fast this year has gone by! It amazes me even more that we are 45 days away from our wedding!! I am SO excited for our wedding day to be here.
Like everyone else, I am obsessed with Christmas decor. Every year, I might go slightly overboard but I love it! When Patrick and I moved to Houston in July, we decided to rent a house for a year since we weren’t sure how long we would be here with his job. Y’all, when I say we couldn’t find a house to save our lives, I mean that with no exaggeration. Patrick was living in Minnesota at the time for his job training so I was finding a house for us by myself! It came down to the last week before we were supposed to move and I finally found our house. It has been a great house for us for this year, but we definitely want to buy something after our lease is up that is more updated and more open! This year for Christmas, I didn’t go as all out as I usually do because I had a hard time finding a way to put all my normal stuff out in this house, but I did what I could and I love it all! My sweet mama gave Patrick and I the star that her and my dad had at the top of their first Christmas tree, and also a few pieces of her snow village so that I could start a collection of my own! Our snow village has been passed down from my grandma, to my mom and now to my sister and I. It is SO special to me! Most of my Christmas decorations came from Target, World Market, Home Goods and Hobby Lobby. I have linked everything that I could find for y’all below!
Happy Wednesday! Y’all, I made this recipe for dinner a couple nights ago and it was SO good! It’s also super easy and doesn’t take long to make at all! I will definitely be making this again soon! Even Patrick liked it, so that’s a win in my book!
Ingredients for Cordon Bleu:
1 tablespoon garlic powder
1 tablespoon onion powder
16 slices Swiss cheese
1/2 pound slice ham
1 cup flour (I used gluten free flour)
2 cups panko bread crumbs (I used gluten free bread crumbs)
Ingredients for creamy Dijon sauce:
2 tablespoons butter
2 cloves garlic, minced
3 tablespoons flour (I used gluten free flour)
2 cups milk
1/4 cup dijon mustard
1 cup shredded parmesan cheese
Directions for Chicken Cordon Bleu:
Sprinkle the chicken breasts with salt, pepper, garlic powder, and onion powder, tossing to coat evenly
On a cutting board, place a chicken breast between two sheets of plastic wrap and pound until about 1/2 inch thick with meat mallet, rolling pin or heavy pan
Remove the plastic wrap and place a layer of Swiss cheese, then ham, then one more layer of Swiss cheese
Evenly roll the chicken, and place onto a new sheet of plastic wrap
Wrap the chicken in the plastic wrap, twist the excess plastic, and roll the chicken while twisting the sides in to tighten and firm up the roll on chicken cordon bleu. Tie the excess and chill in the fridge to set for 30 minutes
After the rolls are set, prepare large, wide dishes with flour, beaten egg, and bread crumbs, and dredge the chicken in the flour, egg, and bread crumbs
Place the breaded chicken cordon bleu in a 325 degree pot of oil, and cook about 5 minutes per side or until the outside is an even golden brown. If a good color is acheived and the chicken’s center is still not 165 degrees, you can finish the chicken in the oven at 325 degrees until that temperature is reached
Directions for Creamy Dijon Sauce:
In a small pot on medium heat, melt the butter and cook the garlic until soft
Add in flour, and whisk for 1 minute
Add in the milk, and whisk until fully combined with the roux. Continue whisking until the mixture comes to a simmer and has thickened
Add in the Dijon mustard, salt, pepper, and Parmesan cheese. Whisk to combine. Set aside
Slice the chicken and drizzle with Dijon sauce.
